Princesses' Tea Cupcakes



Posh, pretty, and perfect- the things princesses are made of! These cupcakes are delicate and light, and are great for a tea party treat without leaving your tea party dress stretched around a engorged stomach. I ensure that these darling little treats will make you feel as special and stylish as Kate, but sadly will not help you to get the Pippa bum. Honestly though, if you had to pick between the bum and these cupcakes, I think it would be a very tough call, and the cupcakes would probably win.






Ingredients
Genoise sponge
6 eggs
1 cup castor sugar
1 and a half cups flour
pinch of salt
1ts vanilla extract or essence
2tb melted butter


Topping
500ml whipping cream
2-3tb icing sugar
30 strawberries


Method
Preheat your oven to 180°c.


Beat the eggs, sugar and vanilla (in a clean and dry, glass or metal bowl) bain-marie style over a pot of simmering water, until thick and pale.


Remove from the heat and continue to beat until cool.


Sift the flour and salt twice, and fold gently into the egg mix using a metal spoon.


Add some cake mix to the melted butter, mix, then tip back into the cake mix and give a quick, light stir through.


Line a muffin tray with cases, fill with the mixture and bake for 20-25min, until an inserted toothpick comes out clean. Leave to cool completely.


Whip the cream to soft peaks, stir through the icing sugar (taste to test sweetness), and whip to firm peaks.


Top each cupcake with a generous blob of cream and sliced strawberries, dust with icing sugar and serve :)
