Butternut Fritters



Great as a starter or snack, these fritters are creamy and delicious with a hint of spice.

Ingredients:
2 cups cooked and mashed or pureed butternut
1 tablespoon butter
½ cup flour
1 teaspoon baking powder
1 teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
1 egg

Method:
Simply mix all the ingredient together, and fry spoonfuls in canola or sunflower oil (canola is better for your <3) until golden brown. Leave to rest on kitchen towel, and make your sugar mixture by placing about 1/3 of a cup of sugar and 1 to 2 teaspoons of cinnamon in a bowl. Mix well and use to coat the fritters. Serve nice and hot (a few seconds in the microwave won’t harm the fritters if they go cold), with a squeeze of lemon juice. As tasty and comforting as pancakes, with all the goodness of a vegetable!
